Caraway seeds closely resemble cumin but the two have very distinct flavours. The seeds are used as a spice and medicine. As a spice, the caraway aroma consists of carvone (50 – 85%) and limonene (20 – 30%). As medicine, caraway is a carminative which means it helps with gas and digestion. It has been used for colic as it is a light sedative and it can be used to settle a queasy stomach.
How to use:
It is helpful to chew caraway seeds after a heavy meal. Chewing also freshens breath
Add as a spice when making rye bread, cakes, cookies, soups, omelets, rice and pasta dishes, cheese spreads, and vegetable dishes.
